Suggest a better descriptionPreheat oven to 300°F.
Preheat Dutch oven to medium heat.
Toss beef with ¼ c flour and salt and pepper, add 2 Tbsp olive oil to Dutch oven and sear beef on all sides for 2 min per side, or until browned. Remove from Dutch oven and set aside.
Add remaining cooking oil, celery, fennel, leek and garlic to Dutch oven and sauté for 5 min, or until slightly translucent.
Add white wine and deglaze pan until wine is reduced by half.
Add carrots, turnips, celery root, parsnips, chicken stock and thyme. Bring to a gentle simmer, and cover.
Place in oven for 2 hrs or until beef is tender.
Remove from oven, place on stovetop and bring to a gentle simmer. Remove thyme sprigs and discard.
Add remaining flour and stir gently to combine. Season with salt and pepper to taste.
Garnish with freshly chopped parsley and enjoy!
