Hearty beef stew that warms the kitchen and fills you up.
1 - Cube the beef, removing any excess fat or gristle.
2 - Heat a large pot to medium heat.
3 - Add beef, 15 ml of stewing beef and 125 ml of water. Add crushed chilies.
4 - Reduce heat and simmer on low for 20-30 or until beef is tender.
5 - Add rest of water and beef stock and turn heat to high.
6 - When water boils, add potatoes, carrots and broccoli. Reduce heat to simmer for 10 minutes.
7 - Raise heat to high again and add the rest of the vegetables. When the mix starts boiling again, reduce heat to simmer.
8 - Check spicing and correct as necessary.
9 - To thicken the broth, add cornstarch to a bowl and then slowly add broth from the stew pot, stirring in thoroughly, until the cornstarch reaches the consistency of a thin paste. Add this cornstarch mixture into the stew mix slowly, stirring continuously as it is added. Let simmer for a 5 minutes to allow for the heat to thicken the cornstarch mixture. Thicken further using the same method above by using more cornstarch. Be careful not to add too much as the broth can thicken suddenly and it is difficult to reverse once it has become too thick.
10 - Serve when ready. Serve with fresh bread if you need to extend it, or just because fresh bread is yummy!
Play around with spicing and vegetables as your like. Anything you cook should always be how you like it, not what the recipe says. I often cheat and use pre-mixed spice sets like Tex/Mex or Cajun, even if the ingredients are not strictly of either cuisine.
