Bourbon Chicken Alternative
1. Cut chicken into small squares
2. Cook chicken until no longer pink (about 10 min)
3. Remove chicken
4. Add remaining ingredients, heating over medium heat until well blended
1 TBS Olive Oil, 1 Clove Garlic, 3/4 TSP Red Pepper Flakes, 1/4 Cup Apple Juice, 1/3 Cup Brown Sugar, 2 TBS Ketchup, 1/2 Cup Water, 1/3 Cup Soy Sauce, 1 TBS Cornstarch
5. Add chicken and bring to a hard boil
6. Reduce heat and simmer for 20 minutes uncovered
7. Cook rice according to directions
