This takes a lot of effort, but it's super flavourful and looks very impressive.
Heat 9x13 pan in 400F oven. Coat potatoes with oil, salt, pepper, garlic, & lemon zest. Add to hot baking pan. Roast at 400F, for at least 10 minutes.
Add walnuts, basil, garlic, & oil into food processor. Mix until paste like. Add brie, cream cheese, egg, & salt & pepper. Mix until smooth.
Peel skin off chicken to make a pocket. Add 1-2 tablespoons under skin. Place in pans with potatoes. Do not place on top of potatoes.
In small bowl, mix apricot, Islamic vinegar, & red pepper flakes. Brush on top of chicken.
Bake at 400F for 30-40 minutes, until chicken is cooked. Check halfway through to ensure potatoes are not burning.
