Shredded beef is used instead of ground beef. The ingredience are layered but the beef, onions and peppers can be mixed ahead of time. The cheese is added last to hold the edges together while browning.
Spread refried beans thinnly down the middle of tortilla. Layer on beef, onions, peppers and cheese. Fold over edges and place in skillet over medium heat with melted butter. Cooked until browned then brown other side.
Serve with sour cream and salsa.
These come out a bit small in my attemps to keep the filling from cooking out of the tortilla.
