Don't over cook shrimp
Pre-heat oven to 400. Rinse and peel shrimp, leaving tail shell on. To butterfly shrimp, cut on top of curve but not all the way through so that its all one piece. Melt 1 1/2 cup of butter. Rinse shrimp again (and refridgerate if not using right away). Dip shrimp in butter and lay on wire rack on cookie sheet lined with foil. Sprinkle (mediumly) with essence and parmesian cheese. Place in 400 degree oven and set to low broil for 5 minutes. Then, set on HI broil for 3 minutes. Add lemon juice to remaing melted butter and serve.
