Using left overs from a Cajun shrimp boil I made a salad adding just a few more veggies and quinoa.
reheat the veggies from shrimp boil in a large pot with strainer with some of the seasoned water from previous day, add a little more water and Louisiana Cajun seasoning as needed. Add the shrimp and asparagus when the veggies are already hot just for about 5 mins. covered and turned off.
On a frying pan heat the coconut oil, add green onions until warm and soft, about 3 min. then add quinoa and warm up for 3 more mins. Mix all ingredients in a large bowl, add a pinch of Cajun seasoning and salt to taste.
