This chili is great for topping hamburgers or hotdogs. My favorite is to top sweet potato fries with this chili and then add a handful of grated cheddar cheese on top of that.
**At home, put spices (from Brown Sugar to Ground Sage) in a zip lock bag to make it easier to prepare this chili at the camp site.
Pre-heat dutch oven to 350(F) degrees.
Add oil to dutch oven. When oil is heated through, add beef and onion. Stir to brown the beef and caramelize the onion. Once the meat is browned to desired doneness, drain fat from pan. Add remaining ingredients, stir well to mix, and place lid onto dutch oven. Divide coals to create a reverse baking method.
As this will be an "upside down" heat, 1/3 of coals will be on top with 2/3 coals on bottom. Make sure to turn top and bottom of dutch oven in opposite quarter turns every 8-10 minutes as you stir the chili.
Bake 30-45 minutes following the above directions. Remove from heat, and remove the lid of coals. Let set 5 minutes before serving.
