This is an easy-to-make cake, perfect for when you have fresh apples on hand. It is moist and flavorful, good with or without the caramel frosting. I prefer to make cupcakes but it is also good as an oblong or layer cake.
Pre-heat oven at 350 degrees.
Blend first four ingredients in a large bowl on medium speed of electric mixer until smooth.
Whisk together flour, soda, salt and spices in separate bowl.
Add flour mixture to mixing bowl and mix thoroughly.
Stir apples and nuts into mixture.
Pour batter into 24 cupcake containers, one 9" X 11" pan or 2-3 layer cake pans.
Bake until knife inserted into cake comes out clean. Cupcakes: minimum of 40 minutes. Cake: minimum of 50 minutes.
Prepare (optional) Caramel Frosting while the cake is baking, as follows:
Melt 1/2 cup of butter in medium-sized saucepan.
Add brown sugar and boil over low heat for two minutes, stirring constantly.
Add milk and stir until the mixture comes to a boil.
Remove from heat and cool.
Beat powdered sugar into mixture until smooth and easy to spread.
Any type of apples is okay, but I like to use sweet ones, like Honeycrisp or Sweet Tangos.
