1. In a large bowl, mix eggs and sugar. Stir in dry ingredients and mix well. Add carrots, pineapple, nuts and vanilla and mix well.
2. Pour into three greased and floured 8-1/2x4-1/4-inch loaf pans. Bake at 375? for 1 hour. Cool in pan on wire rack. Yield: 3 loaves.
This delicious, moist bread makes a lot, but freezes well. You'll be glad you have an extra loaf or two in the freezer!
