Cheese, Tomato and Pasta, topped with breadcrumbs and grilled. Use up those cherry tomatoes before they go off.
1) Cook your pasta. Use your favourite shape, penne, fusilli etc. Give it about 10 mins before going to step 2.
2) Heat Oil and a saucepan
3) Fry the (optional) onions in the oil until softened. -Approx 2 mins
4) Add your pre-halved tomatoes to the pan and cook on a low-heat until softened. -Approx 3 mins
*Note: You need enough to complete a layer of tomato in your square dish.
5) When ingredients are ready : Put the grill on to heat up. Medium Heat.
6) layer the pasta into the bottom of your lasagne dish.
7) Grate a thin layer of cheese after the pasta.
8) Spread over the onion and tomato mixture, creating an even layer
9) Layer your breadcrumbs over the top.
10) Grate some more cheese to taste.
11) Finally, sprinkle your herbs on.
12) Place under the grill for about 2 mins or until it's heated through.
Serve with Salad and/or Garlic Bread. Enjoy.
You can easily adapt this recipe. Posh it up by using goats cheese in your bottom layer. Cook some garlic in with your onions. Thinly slice and fry some mushrooms for another layer.
