Trim ends of broccoli. Chop broccoli by thinly slicing it starting from the flower part. Steam broccoli in large sauce pan with water oer hight heat for 10-12 mins.
Meanwhile, saute celery, mushrooms & onion in nonstick skillet over med-high heat for 10 mins. Drain.
Meanwhile, in small sauce pan over low heat, heat soup & Velveeta until cheese melts.
Combine broccoli and saute mixture. Pour cheese mixture over broccoli mixture. Stir in garlic salt and pepper.
Pour into greased round (2-quart) casserole dish. Bake at 350 for 25 mins.
Remove from oven. Top with grated cheddar cheese. Bake at 350 until cheese melted.
