Stuffed chicken breast

Place 2 chicken breasts at a time in a gallon ziplock bag and pound very thin (lengthwise as much as possible)
Trim uneven edges off of the chicken
Dip both sides of chicken breast in flour
Place slice of ham and slice of cheese on each breast - leave at least 1" at bottom of chicken empty
Roll chicken from stuffed side down to empty side and hold together with toothpicks
Roll again in flour, then in eggs, then in bread crumbs
Place toothpick side down in pan with thin layer of olive oil
Bake at 450 for appx 25 minutes (until golden brown)
Let sit for a few minutes before serving
Pound as thin as possible without the chicken falling apart - makes for easier rolling
