A tasty chicken casserole, served with brocolli and rice, in a savory sauce.
Layer the bottom of baking pan with half the cooked chicken. In a skillet, heat the
the milk, the flour, and the butter until the mixture thickens. Stir in the broccoli, and
cook another minute. Remove from heat. Line the bottom of baking pan with the
broccoli mixture. Spread half the chicken over the broccoli. Mix together the mayonnaise,
the lemon juice, and the cumin. Spread the mayonnaise mixture over the chicken.
Layer with the rest of the chicken mixture, the broccoli, and the cheese. Mix the cracker
crumbs with the butter and sprinkle over the cheese. Place in oven and bake at 350 F.
until cheese is melted and the mixture is hot throughout.
