Prepare all the ingredients and allow people to serve themselves at the table.
In shallow dish, combine lime juice, chili, cumin, oil, oregano and cinnamon. Rinse chicken and pat dry. Add to lime mixture, turning to coat evenly. Let stand 15mins or refrigerate up to 2 hours.
In a small bowl, stir together salsa and sour cream; chill until serving time.
Lay onion slices and capsicum on a lightly oiled barbecue grill over a solid bed of hot coals or on a gas grill over high heat; close lid on gas grill. Cook, turning vegetables to brown evenly, until vegetables have dark grill marks and are slightly limp, 7-12 minutes. Remove from grill and keep warm; when peppers are cool enough to handle, rub off any loose bits of skin. Separate onion into rings.
Remove chicken from lime mixture and lay on grill. Cook, turning once to brown evenly, until chicken is tender (about 15 minutes). Remove from grill. When chicken is cool enough to handle, slice into 1/2" wide strips and keep warm.
Stack tortillas on a sheet of heavy foil. Seal tortillas in foil and set packet on grill. Turn over often until tortillas are hot, 5-7 minutes. Alternately, zap a minute or so in the microwave. Wrap in a thick towel and put into a basket.
Spoon chicken, peppers, onions and salsa mix into tortillas. Top with diced tomato and grated cheese.
Can also spoon on guacamole.
