Season Chicken with soy sauce and sesame oil. Heat oil, and stir fry garlic for 1 minute. Add the meat and stirfry meat until darkened. Add mushrooms, oyster sauce, carrots, and sugar. Stir-fry 2 minutes. Mix in corn starch and water. Will thicken and hold together.
Rice noodles, heat oil in wok. When oil is very hot, throw in rice vermicelli. They will instantly ouff up. Scoop out at once and drain on paper towel.
