This is a delicious way for your family to get their veggies. Leftovers are awesome! Based on a recipe from the 'Taste of Home' magazine.
Cook ground meat and chopped onion in a medium skillet until brown and drain fat. In the meantime cook the spaghetti and drain it. In a medium bowl, whisk together the egg, butter and the parmesan cheese. While the spaghetti is still hot toss it in the egg mixture until well coated and set it aside. Add the sauce and season salt to the meat mixture and just enough water to rinse out the jar. Heat oven to 350 degrees. Spray a square baking dish with non-stick cooking spray and layer in pan:
1/2 of the spaghetti mixture
1/2 of the cottage cheese
1/2 of the meat sauce
1/2 of the mozzarella cheese
Repeat layers, cover with foil and bake on cookie sheet (mine bubbled over) for 40 minutes. Remove foil and bake for an additional 20 minutes or until cheese is melted and bubbly.
I believe this would be just as good with no meat at all and it would be fine to leave out the chopped onion. This is one that can be experimented with.
