Suggest a better descriptionPreheat the oven to 350 degrees. Grease a 4 x 8-inch loaf pan, set aside.
In a mixing bowl, sift together the flour, baking powder, ginger, and salt;
set aside.
In a separate (large) mixing bowl, combine apples, eggs, sugar, pecans and
oil; mix well. Combine the wet and dry ingredients; mix just until
blended, but do not over mix or beat the batter. Pour into the prepared
loaf pan.
Bake at 350 degrees for 60 - 80 minutes or until a toothpick tests done.
Cool on a rack for 10 minutes before removing from the pans.
