Cakes
Combine crab meat, shallot, ginger, mayo, lemon juice, paprika, cayenne, salt & pepper, cilantro and breadcrumbs. Tightly mold or shape and refrigerate at least 30 mins before frying.
Dredge in flour, coat in well-beaten egg & coat with more panko or breadcrumbs.
Fry on medium heat in 1/8" oil, browning all sides
Salsa
Combine pineapple, jalapeno, onion, lime juice, olive oil, cilantro and salt & pepper
Apple Slaw
Combine apple, lemon juice, olive oil and poppy seeds
Chili Sauce
Combine chili sauce, vinegar, honey, water and garlic, simmer briefly to a light syrup consistency. Cool. If too thick, dilute with water
