Traditional Cajun Crawfish Etouffee - Delicious!
Melt butter in pan. Stir in and sauté vegetables for 30 minutes. Add garlic and sauté another 10 minutes. Add Seasoning (Tony’s, cayenne and Salt) and stir good. Push vegetables to the side of the pan and pour in flour for the roux. Once it looks creamy stir it all together and cook for another 30 minutes – stirring constantly. Heat up 2 cups of water in microwave and get it hot. Add a little hot water to pan and stir. Add a little more hot water and stir. Then add your 2 lbs of crawfish. Stir and add the rest of the hot water. Get it boiling then reduce heat, cover and let it cook for about 20 minutes. You can stir it about every 5 minutes to make sure it isn’t sticking to the bottom. Serve over rice.
