Creole-style black eyed pea and and sausage one-pot meal served over rice. Great for New Year's Day.
To drained soaked peas add salt pork and cover with water. Cover pot and cook on low heat for 45 minutes. Add the next 13 ingredients (thru thyme) then cover pot and cook 45-60 minutes. Add sausage and cook uncovered for 45 minutes.
Serve over rice and accompany with cornbread.
Best if 1 lb.of the sausage is Andouille.
