Cake can be made up to 1 day ahead and kept at room temp covered. Can also use 2 lbs fresh sliced peaches (5 large) or 2 lbs frozen peaches- thoroughly thawed, drained, and patted dry. 590 cal/ 6.5 oz slice
1. Spread peach slices between several layers of paper towels and let dry, gently pressing occasionally and replacing soaked towels- 20 min
2. Meanwhile, pour melted butter over bottom of 6 qt oval slow cooker. Stir together brown sugar, cinnamon and nutmeg in a bowl and sprinkle over butter.
3. Arrange peaches in a tight layer over brown sugar.
4. Beat softened butter w/ white sugar in a lg bowl w/ an electric mixer till light and fluffy (3 min). Beat in eggs, 1 at a time, beating well after each. Beat in almond extract.
5. Whisk together flour, baking powder and salt in a separate bowl. Working in batches, stir flour mixture into egg mixture alternately w/ milk, beginning and ending w/ flour mixture. Mix batter till well combined. Spoon over peaches and spread evenly.
6. Drape paper towels over top of cooker then cover w/ lid. Cook on high 2 to 2 1/2 hours till wooden skewer comes out clean.
7. Using oven mitts, remove ceramic liner from cooker and let cool 10 min. Run a knife around edge of cake and carefully turn out onto a serving platter.
