Suggest a better descriptionPreheat oven to 350 degrees. Coat skillet with oil & heat over medium heat. Sauté onion, garlic & bay leaves for a few minutes to create base flavor. Add red bell peppers & cooked to soften. Now add tomatoes. Stir in parsley, ketchup & Worcestershire. Season with salt & pepper. Simmer relish for 5 minutes. Remove from heat. Place torn bread in bowl & add milk to cover, swish bread around in milk & let sit. In large mixing bowl combine beef & pork with 1.5 cups relish, eggs & thyme; season with salt & pepper. Squeeze excess milk from bread & add soaked bread to meat mixture. Lightly oil a cookie sheet. Transfer meat mixture to cookie sheet & form log. Coat top of Meatloaf with 1.5 cups tomato relish. Lay bacon across top lengthwise. Bake meatloaf for 1-1.5 hours until bacon is crisp & Meatloaf is firm. Rotate Meatloaf occasionally to ensure bacon browns evenly. Remove from oven & let cool a bit before slicing. Serve with remaining relish.
