I've finally found a solution to my breakfast problem! Getting up extra early and making scrambles at 0430 so Mama would have breakfast when she got up just wasn't working. Not to mention, eating scrambles on the run later in the morning was logistically difficult for me. (And who can eat at 0430 anyway?)
So, after much trial and error, I've found a viable solution. Easy, portable, make in batches, no need for a fork to eat 'em scrambles! And high protein, grain-free, and tasty to boot!
Crack an egg into a measuring cup. Mix it as if you were going to scramble it.
Add your fixins. Don't exceed 1/3 cup total, or the mix will overflow the muffin well, and messy chaos will ensue. Any ingredient you don't want semi-raw should be pre-cooked. Suggestions I've used inclue kale and mushrooms sauteed with a little butter and basil, with a pinch of shredded colby jack. Or chopped bacon with avocado cubes and a little shredded pepper jack.
Pour the egg mix into one of the muffin wells. Repeat until the muffin tin is full. You can mix things up and make different kinds in different wells...A win-win when you have situations like mine. (My vegitarian mother doesn't like any kind of peppers, and I'm a carnivore who loves spicy stuff.)
The only oven in my kitchen is a NuWave induction oven, but this will work in a real oven as well. I put the muffin tin in, turn my 'easy-bake oven' on to high (350°) and let 'er cook for 17 minutes. Then I just pop them out of the tin and let them cool for a bit.
They store well in the fridge for several days. Just zap 2 in the nuker for 1 minute, and you have a quick, warm, tasty breakfast! (Don't freeze them, though. They get really rubbery when you reheat them.)
