Edamame and Mango salad
Source: Caprice's Speciality
cook edamame according to directions ( Microwave is easiest)
shell cooked edamame
cube 1 Mango or use 1 cup of cubed frozen mango ( I like using the frozen mango because it cools the edamame fast
mix lemon juice, shelled edamame and mango in a bowl, salt to taste, then serve or put in fridge
It tastes better after it has been in the fridge for 20 minutes.
For extra protein add avocado
for more crunchiness - add onion and cucumber
