These sammies are really good, but I swung and missed a couple times making them. One, with fajita meat, fillet all the membrane off the meat. Keep reading A lot of cuts of beef will work with this but not trimming the meat (especially the membrane) will create a pull when you bite into the sandwich. Two, keep an eye on cooking shrimp, those are a little overcooked. Overcooked shrimp will dry and shrink.
