one of our favorite salads and great for meal prep. Add whatever protein you have around or left over from yesterdays dinner.
DRESSING: combine all ingredients except olive oil in medium bowl. Whisk to combine. Slowly drizzle olive oil into dressing while whisking until thickened and smooth. Store in air tight jar in fridge for up to 2 weeks.
SALAD: roast pine nuts in dry non-stick skillet over medium high heat until lightly browned and fragrant, about 2-3 minutes. Toss all ingredients together with enough dressing to coat lightly. Divide into bowls and top with protein if using.
