A quesadilla, only with corn tortillas
Prep the tortillas by spreading all ingredients except the tortillas, obviously, avocado, and salsa. Warm a flat skillet or griddle over medium-low heat; add coconut oil. Put prepared tortillas directly on the oil and move the "tostada" around a bit. Cover with a lid that covers just the tostada or the entire pan, whichever.
Heat until golden (usually about 3 - 5 minutes), then flip; repeat on the other side.
Top with salsa and avocado. We like to add sour cream or greek yogurt.
