to make the Garam Masala (spices), place all the spices into a dry frying pan. shake over medium heat for 1 minute until mixture is fragrant. Blend in a spice grinder or blender until a fine powder.
then heat oil in pan, once up to heat add chopped onions and chopped garlic and simmer for 2 minutes add 3 teaspoons of Garam Masala
Add Rice and Lentils and cook for a further 2 minutes.
Add Vegetable stock and bring to the boil, then reduce heat for 15 - 20 minutes until rice is cooked and liquid is absorbed
place on plates and garnish with spring onion
