My kids love gingerbread and asked to eat it for breakfast so i came up with these easy pancake treats. They loved them!!
pour evaporated milk into microwave safe bowl and warm for 30 seconds. Dissolve molasses in evap milk and set aside.
Combine all dry ingredients except for baking soda in a large mixing bowl. add liquids except for lemon juice. When well blended, add soda and mix well then add lemon juice. When well blended pour onto griddle heated to 325. Flipped when bubbles appear on surface.
Serve with cream cheese butter. Make this by blending 4 oz of softened cream cheese to 2 oz softened butter add 4 T powedered sugar.
