This has been a family favorite for years. It's simple and not too heavy. Perfect for lasagna.
Put about 3/4 quart of tomato juice in a pan. Add the tomato paste and a little ketchup and heat to a boiling point. Brown hamburger. Add tomato mixture, garlic, onion, water, salt, pepper, and bay leaf. Simmer about three hours on low heat. Cook lasagna noodles in four quarts of water for about 12 minutes. Blanch in cold water. Arrange crisscross in pan while cooking to prevent from breaking. Put some tomato juice in the bottom of a casserole dish. Arrange first layer of lasagna noodles in baking dish. Put on some sauce, mozzarella cheese, and then cottage cheese. Put the next layer of noodles in the pan crisscross to the layer before. Add ingredients the same as above. After each layer, saturate with tomato juice. End casserole by putting sauce on the top and sprinkling with parmesan cheese and mozzarella. Bake in moderate oven (350-375) for about 25 to 40 minutes or until cheese melts good. This makes 2 lasagnas
Each layer
1 cup sauce
3/4 cup cottage cheese
2/3 cup mozzarella cheese
Also I double this recipe to make four lasagnas and use a #10 can of crushed tomatoes to make the sauce. I don't add the tomato paste if I do this and I water down a cup or two of the crushed tomatoes to substitute for the tomato juice
