The secret to clumping is not to stir while baking and letting cool completely.
Preheat oven to 250 degrees. Cover two baking sheets with parchment paper.
In a large bowl, combine oats, nuts, coconut, dried fruit, sugar, and salt.
In a small bowl, combine syrup and oil.
Pour liquids over dry ingredients and mix well until evenly coated.
Spread the mixture over two baking sheets in an even layer, leaving a large donut hole in the center (for even baking).
Bake on middle and lower racks -- *without stirring* -- for about 40 minutes or until golden brown, rotating the baking sheets front to back and top to bottom half way through. Be careful not to burn the dried fruit.
Remove from heat and allow to cool before breaking into clumps.
Store in well sealed containers.
