8" cast iron skillet line wiht bacon hanging over edge
layer half th epotatoes onto bacon and thyme. sprinkle 1/4 cup cheese over potatoes season with salt and pepper. Repeat layer with chicken and 1/4 cup cheese. Continue layering with leeks and garlic, remaining potatoes, salt pepper and cheese. Fold bacon over . Cook on stove for 10 minutes. Cover with foil and roast 30 minutes. Remove foil and roast until bacon is crisp and potatoes are done about 30 minutes more. let rest drain drippings adn serve.
