Moist and full of spice this is a delicious cake perfect for a large group. Recipe makes several cakes so some can be frozen.

1. Preheat oven to 325 F.
2. Prepare 2 9x13 pans, or 2 10 inch tube pans, or 3 9 x 5" loaf pans.
3. With an electric mixer beat the oil, sugars and eggs 5 minutes at medium speed.
4. In a separate bowl sift the flour with soda, salt, cinnamon, coriander and nutmeg. Mix well.
5. Add dry ingredients to creamed mixture stirring just enough to blend.
6. Add apple, vanilla and walnuts and beat 2 minutes at high speed. Scrape the sides of the bowl and beat one minute at high speed.
7. Divide the batter among the pans and bake in a 325 F oven. Baking temperatures will range depending on the type of pan used. (Approx. 1 hr 10 minutes to 1 hr. 25 minutes).
8. Let cake cool on wire rack 20 minutes before removing from pans.
This cake is delicious on its own but can be served with a brown sugar or caramel buttercream type icing. These cakes freeze well.
