Open faced grilled banana sandwich with honey-butter, cinnamon and mozzarella
Lightly toast bread
Mix the honey, butter and half of the cinnamon until blended and smooth
Spread two-thirds of the honey-butter on 1 side of each piece of bread
Grill on medium heat for 30 seconds
Remove from grill and cover each slice of bread with 4 slices of mozzarella until covered
Return to grill for 1.5-2 minutes until mozzarella starts to melt
Cut each banana length ways and width ways into 4 sections
Coat in the remainder of the honey-butter
Place 4 banana sections on each slice of bread and drizzle any remaining honey-butter on top
Sprinkle remaining cinnamon
Return to grill for 3-5 mins until bananas are turning brown
