Serve with Grilled VEgetable Saffron Rice Salad (see recipe).
Grill the mushrooms until just cooked through. Let cool, then thinly sliced them.
Whisk the shallot, mustard and vinegar, then whisk the 1/2 cup of oil until emulsified and season with salt and pepper. Fold in the mushrooms, parsely adn thyme. Set aside at room temperature for at least 20 minutes.
The sauce can be made up to 2 hours in advance, covered and set aside at room temperature.
Grill the fish until crusty and browned. Remove to serving plates or a platter. Spoon the mushroom sauce over each piece, sprinkle with parsley and serve immediately.
