Slice the tofu into slabs about 1/4 inch thick and set them on paper towels to drain. Meanwhile, combine the bread crumbs, cheese, and herbs in a flat dish. Dip each piece of tofu into the egg mixture, then the bread crumbs. Film a skillet with the oil. When hot, add the tofu and fry over medium heat on both sides until golden, 10-12 minutes in all.
