Preheat oven to 350 degrees.
Place zest and juice from citrus in a large bowl. Peel quarter, core, apples and toss them in the juice. Pour all into Iron Pot. Add brown sugar, cinnamon and allspice and cover.
Bake for 1 1/2 hours or until the apples are soft. Mix with whisk until smooth.
serve warm or at room temperature.
