Similar to split pea soup. Tasty and straight forward to make. Pair with some good bread. If recipe is doubled, will need to simmer in my very largest pot.
1.) Heat oil in dutch oven with medium heat
2.) Add Onion, Carrots, and Celery, and saute until soft and beginning to caramelize; 7-10 minutes.
3.) Add garlic and saute 1-2 more minutes.
4.) Add in lentils, barley, cumin, parsley, bay leaf, vegetable broth, and cilantro. Cover and bring to boil.
5.) Reduce heat to simmer, until barley and lentils are soft - about 1 hour.
6.) Remove from heat and remove bay leaf.
7.) Stir in lemon juice.
8.) Serve
Serve with quality bread and butter
