Combine the seasoning mix ingredients thoroughly in a small bowl
Heat a large ovenproof pot over high heat, about 3 minutes.
Add the stew meat and cook, turning once to brown, about 2 minutes.
Add : (and stir well) , the bay leaves, 3 tbs of the seasoning mix, 3 cups of the onions, 2 cups of the green peppers, 1 cup of the celery, the garlic and the beef sausage
Cover the pot and cook , uncovering occasionally to stir for 15 minutes.
Uncover the pot and cook, stirring and scraping occasionally, until a hard crust forms on the bottom of the pot, 10-30 minutes
Add the tomatoes, butter, the rest of the onions, peppers and celery
Stir well, cover and cook until a crust forms on the bottom of the pot, about 10 to 20 minutes.
Add the beef stock and scrape the bottom of the pot clean
Add the pork sausage, cream, rice and the remaining seasoning mix
Cover the pot and place in the oven and bake for 90 min
Turn off the heat and leave the pot in the over for another 15 minutes
