2. Mix olive oil and jerk seasoning in a small bowl.
3. Toss the fries with seasoning and bake as directed.
4. Switch the pans half way through.
5. Sprinkle with scallions when done.
6. While baking, mix the chutney mayo.
7. Combine mayo, mango chutney, the zest and juice of one lime and a dash of hot sauce.
8. Serve with fries when done.
