This one is not a 30 minute week night meal. Feel free to bulk up the sauce and freeze it for later. This can also be prepared as a ziti rather than a lasagna if you like.

Briefly sauté onion and garlic in olive oil. Add meats and brown. Drain. Add basil, oregano, sugar, red pepper, salt, pepper, tomato sauce, wine, and tomato paste. Simmer for 30 minutes. Add parsley, simmer 30 minutes more. Salt and pepper to taste, if necessary. (You can bulk up the sauce as much as you want in this step, separate it out and freeze it for later)
For cheese mixture, combine cheeses, spinach, eggs, salt & pepper.
Prepare lasagna noodles according to package directions pulling out slightly early as they will continue to cook in the oven when baking the lasagna in the final step.
Start off adding small amount of sauce to bottom of pan. Layer noodles, meat, and cheese. Sprinkle a bit of mozzarella and parmesan on top. Recipe has been tweaked a lot so you will not find the exact measurements in the store containers (ricotta, tomato paste etc.)
If you prefer, you can prepare this as a baked ziti, To prepare as a ziti you would mix pasta, sauce, and cheese mixture together.
Place in large baking dish, sprinkle top with mozzarella and parmesan and bake as directed below.
*some people substitute cottage cheese for the ricotta. Do NOT do this - cause cottage cheese is just nasty and shouldn’t be eaten ever.
Bake in 350 degree oven for 40 minutes or until bubbly and heated through. Let stand for 15 minutes.
