Easy mild child friendly butter chicken

Heat oil in a large pot/wok, add garlic, ginger, chilli, curry powder, garam masala, mustard seeds and tomato paste, and fry gently until fragrant (1-2mins). Add canned tomatoes, coconut cream or cream and sugar and simmer for 5 minutes. Add chicken, kumara, sweet potato, salt/pepper. Bring to a boil then reduce to a simmer and cook until the chicken and vegetables are cooked through (about 20mins). Mix in spinach, if using, and coriander, stirring so they wilt.
