Laura's Chicken Enchiladas
Cook chicken breasts whole with bay leaves for 20 minutes.
Cut up the chicken after it cools into small pieces.
in a large pan, add 1 stick of butter and melt it and then add two tablespoons of flour and stir.
Add a little cream so it thickens and 2.5-3 cups of sour cream and stir and taste it. Add salt and pepper.
In a large bowl, add the chicken and mix couple of handfuls of cheese and one small can of green chiles. Add half of the sour cream sauce and stir. Then add more and stir again.
Put mixture into the tortilla, make sure it's not too close to the edges.
Put a thin layer of the sourcream sauce in the pan. Then put each tortilla down, seamside down. Roll the tortillas as hard as you can.
Finish with a big layer of the cream sauce on top of the tortillas. Sprinkle mexican cheese on top.
Cook in the oven at 350 degrees for 30 minutes. Cook the first 20 minutes covered with foil.
