Cook rice, separate and cool.
Heat oil. Add curry leaves. When heated add mustard seeds and splutter. Once it starts bursting add Channa dal and turn off when it turns slightly red. Add turmeric and dried red chilies. Add cashews.
Add separated rice and mix without breaking the rice. Add salt to taste.
Add juice of one extra large lemon or 2 medium sized lemons and mix.
