Chili the way we like it, ain't no noodles in this! Add them if you want... Make it spicier if you want.
Cook beans according to package directions. I usually put them in a large pot or dutch oven, add enough water to cover them, bring them to a boil, then allow them to boil for 15 minutes. Turn off the heat and let them sit for a couple of hours. They will continue to cook without heat, and also absorb water. This is called the "quick soak" method. Reserve the liquid.
In a separate skillet, brown ground chuck till no longer pink in the middle. Add onions and garlic. Simmer till onions are tender. Add to the pot of pre cooked beans. Add all the other ingredients, mixing well. Bring to a boil, reduce heat and simmer for a minimum of two hours, stirring occassionally.
Serve with grated cheddar cheese sprinkled over the top, and any kind of biscuit, garlic toast, or even buttered bread!
This is one of those that the longer it cooks, the better it tastes, but two hours is just about right. Feel free to add more chili powder if you like. As I can''t tolerate spicy foods, my husbands flavors his with tabasco sauce to make it "warmer". I have on occasion added chopped green chiles, cilantro, or even leftover salsa to this, if you''d like to get rid of that jar taking up space in the fridge.
