I dedicate this chili recipe to Mara B...high school friend & Facebook friend, too...
Saute onion in oil (oil of your choice, ie..canola, vegetable or olive) for approximately 4-6 minutes until tender, but not browned on a low to medium heat
Add the garlic and sautee on a low heat until tender, approximately 2-3 minutes or until you can smell the cooked garlic Add the minced jalapeno...(depending on how much spice you like)
Then add the ground beef (one that has medium fat such as sirloin or the ground beef of your choice). Cook until the meat is thoroughly cooked through, with no redness…drain any excess fat if you prefer
Add the tomato paste and the wine and stir consistently for about 3-5 minutes on a low to medium heat; you want the red wine to reduce at least by 1/2
Add the tomatoes, salt, sugar, pepper, bay leaf, beef broth and stir/simmer for approximately 3-5 minutes
Then add the chili powders…depending on your taste…taste the chili as you add the spices
Bring to a boil then lower to a simmer. Simmer covered for approximately 1 hour…or more if you prefer
Serve with the following (whatever is your liking…sour cream, diced avocado, shredded sharp cheese, tortilla chips or even a side of cornbread)
