Prepare in the morning before work and it's done when you get home!
Best to defrost the meat before cooking, but I never do!
If Defrosted--
In a skillet, heat the oil to medium high and sear the meat until browned on all sides (about 2 min/side). Cut tiny slits in the meat all around and slip a sliver of garlic in each slit. Generously sprinkle with salt and garlic powder. Add the roast to the crockpot.
If Frozen---
Place the roast in the crockpot, with the fat side up. Generously sprinkle with salt and garlic powder.
Both ways--
Add about a cup of water, and the 1/2 cup red wine to the crockpot. Add the cubed onion, potatoes and carrots to the cockpot. Turn the crockpot on LOW and cover then walk away, or go to work or whatever!
Allow to cook all day, or a minimum of 7 hours. It will not burn, so it can go 12 hours!
Serve by tearing it apart with a fork and serving the veggies, then using the juices to make a gravy.
