Egg, hash browns, and bacon on toast
Boil the eggs and chop them up, cook the bacon and chop it up, grate 3 medium potatoes and cook them until they are lightly browned. Put all the above items into a bowl add mustard, mayonnaise, & sour cream then mix together. Spread mixture evenly on 8 pieces of toast sprinkle cheddar cheese on the top and place on bottom rack of oven under broiler and cook until cheese is melted.
This mixture can be made ahead of time and refrigerated until ready to use
