Rice with jalaoenos Meican Style
This recipe was so twisted but he liked it.. I used 1 box of Uncle Bens Wild Rice.
Puree two tomatoes and 1 white onion in blender. Set aside.
Cook rice according to directions on box. Add chicken stock and let simmer.
Heat oil in a pan and cook peppers and garlic till tender. Add to rice.
Add tomato and onion puree to rice.
Add salt and coriander to taste.
Can add cooked chicken to rice.
